Sweet Potato Mash

Once steamed soft, sweet potato blends to a bright orange puree that is naturally sweet and thick, so you control the consistency entirely with the water you add back.

Ingredients

Instructions

  1. 1Peel ½ sweet potato and cut it into even 2 cm cubes so they cook at the same rate.
  2. 2Steam over simmering water for 12–15 minutes, until a knife slides through a cube with no resistance.
  3. 3Tip into a bowl and blend, or press through a sieve, until completely smooth with no fibrous strands.
  4. 4Loosen with the cooled steaming water, a tablespoon at a time, until the puree drops slowly from the spoon.
  5. 5Cool to lukewarm and check the temperature on the inside of your wrist before offering it.

Tip. Roasting the cubes instead of steaming gives a deeper flavour, though you will need a little more water to bring it back to a puree.
