Broccoli Potato Mash

Broccoli tastes strong on its own, so it is cooked briefly and mashed into floury potato, which mellows it and gives the bowl a soft, green-flecked texture.

Ingredients

Instructions

  1. 1Peel ½ potato, cut it into small cubes and boil for about 12 minutes, until a fork goes through with no resistance.
  2. 2Drop ½ cup broccoli florets in for the last 5 minutes only — long cooking turns them grey and sulphurous.
  3. 3Drain, keeping a few spoonfuls of the cooking water, then mash with a fork, chopping through the florets and any stalk so no stringy pieces remain.
  4. 4Beat in the reserved water until soft and scoopable, and cool to lukewarm before serving.
